WHAT ARE MICROGREENS?
Microgreens are young seedlings of vegetables and herbs which are harvested typically 1-2 weeks after germination. They are larger than sprouts, but are smaller than ‘baby’ greens.
Microgreens are a new class of garnishes jam-packed with nutrients. Despite their small size, they have intense flavours, vivid colours, tender textures and loads of phytonutrients. Studies found that microgreens have 4 to 40 times more nutrients by weight than their mature equivalents (ref), making them a super healthy ‘fast food’.
