ARE MICROGREENS BETTER THAN REGULAR GREENS?
A research study in 2012 evaluated the concentrations of vitamins and carotenoids in 25 microgreens (ref). The results showed that overall the microgreen cotyledon leaves have higher nutritional densities than in mature leaves. Another study also reported that microgreens are moderate to good sources of proteins, dietary fiber and vitamins (ref).
Having said that, microgreens should not replace your regular greens, but serve as a healthy addition to your daily diet.
